WINTERHALTER

The Commercial Warewashing Total System; Authorised Dealer | Jacio Indicius

Machine · Water Treatment · Chemicals · Wash Racks. One System. Perfect Results. Every Time.

The commercial dishwasher is one of the most visible pieces of equipment in a kitchen’s daily operation; and one of the most commonly misunderstood. The assumption that any commercial-grade machine, installed and running, will produce good warewashing results is one of the most persistent and most costly misconceptions in foodservice equipment procurement. The truth is more nuanced, and more operationally consequential: a dishwashing machine produces results determined by the interaction of four variables; the machine itself, the quality of the water entering the machine, the chemistry used for washing and rinsing, and the wash racks that position each item in the wash and rinse streams. When all four are correctly specified and matched, the results are consistently excellent. When any one is mismatched or substandard, the results are consistently disappointing.

Winterhalter, headquartered in Meckenbeuren, Germany, with direct operations in more than 70 countries, has built its international reputation on the Total System principle; the systematic integration of all four variables into a single engineered warewashing solution. Winterhalter does not sell a dishwasher. It sells first-class warewashing results, delivered by a correctly specified system in which machine, water treatment, chemistry, and wash racks work together as a designed, tested, and supported unit.

This approach has made Winterhalter one of the most trusted warewashing brands among the world’s leading hotels, restaurant groups, bars, and caterers; operations where consistent, brilliant results are an expectation, not a hope. Jacio Indicius is an authorised Winterhalter partner, delivering the Winterhalter Total System to commercial kitchens across India, the Middle East, Gulf countries, the USA, and Asia.

The Winterhalter Machine Range; Every Warewashing Format

Polish-Free Undercounter Glasswashers

Polish-free glasswashing is one of Winterhalter’s most commercially distinctive capabilities; and a technology that transforms the economics of glass service in high-volume bar and beverage operations. Conventional glasswashers produce wet, streaked glasses that require manual polishing before service; a labour-intensive process that, in a busy bar processing hundreds of glasses per hour, represents a significant staff time cost. Winterhalter’s polish-free glasswashing technology combines precision water treatment, correctly formulated rinse aids, and optimised final rinse temperature management to produce glasses that emerge from the machine dry, brilliant, and spot-free; requiring no polishing before they are placed in front of guests.

  • Winterhalter Polish-Free UC Series: undercounter glasswashers with integrated polish-free technology; available in multiple configurations for different bar and beverage service footprints
  • Suitable for wine glasses, champagne flutes, beer glasses, cocktail glasses, and spirit glasses; achieving polish-free results across the full range of glassware profiles
  • Dramatically reduces bar staff time spent polishing; allows redeployment to guest service

UC Series; Undercounter Glasswashers & Dishwashers

Winterhalter’s UC (undercounter) series covers the full range of compact commercial dishwashing and glasswashing requirements; from single-station bar glasswashers to high-specification undercounter dishwashers serving small restaurant kitchens and hotel outlets. The UC series is Winterhalter’s most versatile product family, with multiple width and feature configurations allowing precise matching to operational requirements.

Utensil Washers; Dedicated Pot and Pan Washing

Winterhalter’s utensil washer range provides high-pressure, high-temperature washing specifically engineered for the heavy soiling conditions of pot, pan, and gastronorm container cleaning. The wash arm configuration, water pressure, and basket design are all optimised for bulky, heavily soiled items rather than the standard dishware and glassware that conventional dishwashers are designed to clean.

  • Winterhalter Utensil Washer range: door-type and pass-through configurations; multiple basket sizes accommodating standard GN containers through full-size hotel pans and mixing bowls
  • High-pressure wash arms with multiple jet positions for complete coverage of pot interiors and exteriors
  • High-temperature final rinse for hygienic results on food contact surfaces
  • Available with integrated water treatment for consistent results regardless of incoming water hardness

Rack Conveyor Dishwashers; Compact Rack Series

For operations requiring continuous-flow dishwashing capacity, Winterhalter’s compact rack conveyor range provides the step up from hood-type machine throughput to conveyor-scale production; in a format designed for existing kitchen footprints without the full infrastructure requirements of large flight-type machines.

  • Winterhalter Compact Rack series: available in single-tank and multi-tank configurations
  • Throughput from 150 to 350+ baskets per hour depending on configuration and zone count
  • Integrated water treatment; automatic chemical dosing; heat recovery on applicable models
  • CONNECTED WASH compatible for remote monitoring and performance management

MT Series; Multi-Tank Flight-Type Dishwashers

The MT Series is Winterhalter’s flagship flight-type (belt conveyor) warewashing system; designed for the highest-volume commercial kitchen operations where continuous throughput, maximum energy efficiency, and premium hygiene performance must all be delivered simultaneously. MT Series machines set new standards for the flight-type category, providing investment security through a modular design that can be configured and reconfigured as operational requirements evolve.

MT Configuration Zones Throughput Primary Application
MT Base Pre-wash + wash + rinse High continuous throughput Large hotel and resort kitchens; contract catering operations; institutional dining at scale
MT with Heat Recovery Pre-wash + wash + post-wash + rinse + heat recovery Very high throughput; lowest energy per item Operations with high throughput and sustainability commitments; significant energy cost reduction vs non-recovery machines
MT Premium Full zone configuration with air management, condensate handling, final rinse optimisation Maximum throughput; lowest resource consumption per item Highest-specification flight-type; hospital catering; inflight catering; very large institutional operations; 5-star hotel central kitchens

STF; Single-Tank Flight-Type Glasswasher

The STF (Single-Tank Flight-Type) glasswasher is a specialist product in the Winterhalter range; a belt-conveyor glasswasher specifically designed for very high-volume glass service in large bars, beer gardens, event venues, and stadium hospitality operations where the volume of glasses to be processed exceeds what a conventional undercounter or hood-type glasswasher can handle within the available service window.

  • Continuous belt conveyor operation; glasses placed on belt, washed, and received at the other end without basket loading/unloading
  • Polish-free performance available; delivering brilliant, spot-free glasses at belt-conveyor throughput rates
  • Designed for beer gardens, large bars, stadium concessions, and event venues
  • Compact footprint relative to throughput capacity; suitable for bar infrastructure integration

DMX; Drying Device

Winterhalter DMX is a drying device for use in conjunction with Winterhalter warewashers; providing forced warm-air drying of washed items as they exit the final rinse zone. Effective drying is particularly important for plastic items, thick-walled crockery, and complex-shape items that retain water after conventional draining. The DMX reduces towel-drying labour, improves hygiene by reducing bacterial growth opportunity on wet surfaces, and enables faster return of washed items to service

The Four Pillars of the Winterhalter Total System

The Four Pillars of the Winterhalter Total System

Pillar 1; The Warewasher

The machine is the centrepiece of the system, but only delivers its full potential when the other three pillars are correctly specified and matched. Winterhalter machines are engineered to exacting German manufacturing standards; with robust stainless construction designed for the demands of commercial kitchen operation, electronic control systems that maintain wash and rinse parameters precisely, and compatibility with the connected wash and energy optimisation technologies that differentiate Winterhalter from competitors.

Pillar 2; Water Treatment

Water quality is the most common root cause of poor warewashing results, and the most commonly neglected variable in dishwasher procurement and installation. Hard water deposits limescale on glassware, crockery, and machine heating elements; progressively degrading wash quality and machine efficiency. Incorrect water chemistry causes corrosion, pitting, and surface damage to items washed over time. Winterhalter’s water treatment range addresses every incoming water quality scenario:

  • AT Excellence Water Treatment Systems: Winterhalter’s primary water treatment unit; available in multiple capacity configurations for different machine types and water usage levels; conditions incoming water to the precise specification required for first-class wash results
  • External water treatment devices: reverse osmosis and ion exchange systems for locations with particularly challenging water quality
  • Water treatment consumables: filter cartridges, softener salts, and scale inhibitor chemicals; all specified and supplied by Winterhalter to maintain correct water treatment function throughout the system’s operational life

Pillar 3; Chemicals

Winterhalter’s F-series chemicals are formulated specifically for use in Winterhalter machines; ensuring that the cleaning and rinsing chemistry is matched to the machine’s temperature management, water usage, and rinse system design.

  • F-series Detergents (F1, F2, F3, F4, F5 for different wash item types and soiling levels): alkaline detergents optimised for MEIKO wash cycles; available in liquid, powder, and tablet formats for different dosing systems
  • F-series Rinse Aids (R1, R2, R3 for different water conditions and drying requirements): ensures spot-free, rapid-drying results across the full range of wash items and water quality conditions
  • Machine cleaning chemicals: daily and periodic descaling and degreasing products for MEIKO machine interiors
  • Automatic dosing systems: Winterhalter dosing pumps that inject precisely the correct quantity of detergent and rinse aid into each wash cycle; eliminating manual measurement errors and providing documented consumption data

Pillar 4; Wash Racks

Wash racks are the physical interface between the wash item and the machine’s wash and rinse system. A rack that positions wine glasses incorrectly exposes the rim and bowl to inadequate rinse coverage. A rack that allows cutlery to nest together prevents wash water from reaching all surfaces. A rack that overloads crockery reduces wash and rinse effectiveness across the entire load. Winterhalter’s wash rack range provides purpose-engineered racks for every wash item category:

  • Standard plate racks: multiple peg configurations for different plate diameters; correct plate spacing for wash water penetration
  • Glass racks: engineered for different glass profiles; stemware racks, beer glass racks, tall glass racks; correct compartment sizing for the specific glass format
  • Cutlery racks and cutlery cylinders: preventing nesting; ensuring all surfaces exposed to wash and rinse
  • Cup and mug racks: inverted cup positioning for water drainage; compartment sizing for different cup diameters
  • Rack accessories: peg adapters, dividers, and inserts that adapt standard racks for specific wash items
  • Bistro rack: specialised rack for the irregular item mix of small café and bar operations

CONNECTED WASH & EcoPilot; The Smart Winterhalter Kitchen

CONNECTED WASH

CONNECTED WASH is Winterhalter’s IoT machine monitoring platform; providing real-time operational data from connected Winterhalter machines to web-connected management devices. Data available through CONNECTED WASH includes: wash cycle counts and timing; wash and rinse water temperatures; water consumption per cycle and per day; detergent and rinse aid consumption; machine status and fault alerts; and maintenance indicators.

For hotel and institutional operations with documented food safety management systems (HACCP), CONNECTED WASH provides the temperature and cycle documentation that hygiene audits require. For operations with sustainability reporting obligations, it provides the water and energy consumption data that quantifies the environmental performance of the warewashing operation. For facilities management teams, it provides real-time visibility into machine status across multiple kitchen sites.

EcoPilot

EcoPilot is Winterhalter’s real-time wash optimisation technology; a system that analyses actual wash conditions on a cycle-by-cycle basis and automatically adjusts wash parameters (temperature, cycle duration, rinse volume) to achieve the required hygiene result using the minimum possible water and energy. Unlike fixed-programme machines that use the same settings regardless of the actual soiling level or item type, EcoPilot continuously calibrates to the actual wash requirement; saving resources without compromising results.

EasyAccess by Winterhalter

EasyAccess is Winterhalter’s remote service management platform; connecting Winterhalter service engineers (and the Jacio Indicius service team) to installed CONNECTED WASH machines for remote diagnostics, fault analysis, parameter adjustment, and software updates. EasyAccess enables faster fault resolution (many issues can be diagnosed and resolved remotely without a site visit), reduces machine downtime, and enables proactive maintenance intervention when performance data indicates a developing issue.
